This northern most part of the country is known for some of the most beautiful sceneries and adventure sports of the world. Kashmiri cuisine is prepared with liberal use of aromatic spices like saffron (kesar), asafoetida (hing), saunf (aniseed), dry ginger, cinnamon, cardamom, cloves, etc. The most authentic, delectable and special dishes of Kashmir can be enjoyed during festivals. Ladakhi cuisine is simply synonymous with variety. It serves various Tibetan, Korean, Chinese, and Continental dishes.
Wazwan
The history of traditional Kashmiri food dates back to the 15th century when a few cooks migrated from Samarkand to the valley of Kashmir. The descendants of those cooks were called the ‘Wazas’ (the master chefs of Kashmir). ‘Wazwan’, the specialty of the state is named after them only. It is a grand feast known for 36 different types of culinary delights, with a majority of non-vegetarian dishes.
Specialties
The state serves all the vegetarian dishes of India, but the people here are experts in cooking a variety of Rice, Saag (a green leafy vegetable), Lotus Root, Dum Aaloo and Chaman, Apricot Jam etc.
When it comes to non-vegetarian specialties in Kashmiri and Ladakhi food, one can not resist himself for trying out Roghan Josh (the juiciest curried mutton), Thukpa (noodles cooked in mutton soup), Skieu (made with veggies, mutton and flour), Yakhni and Tabaq Naat (made of fried ribs), Gushtaba (pounded and spiced meat balls), Marchwangan Korma (hot mutton curry), Methi Korma (vegetables with chopped intestines) etc.
Kashmir, the land of fruits and nuts, also serves ‘Kahava’. It is a special tea prepared with the use of spices.
When it comes to the traditional food of Kashmir and Ladakh, it is prepared with heavy use of dry fruits like walnuts, almonds and raisins, which provide a pleasant aroma and flavour to the food.
